Is it possible/easy to change a boot that has 6 speed hooks to 6 eyelets? Anyone converted them before?

Depends. It can be done if the hole that the hook is mounted in, is small enough and if you can remove the hook without further damaging the facings. Often times logger's hook are set in eyelets. Sometimes regular hooks are as well.
