Wouldn't that defeat some of the purpose of a shoe tree? I know it will maintain shape, but won't it have trouble absorbing moisture with all that varnish?

I think it depends, but most likely not. When I saw G&G, Dean spoke about the finished trees and mentioned that notwithstanding the finish, the trees remained porous so as to absorb moisture as trees are intended. I'm sure it's something that top shoe makers consider and are well aware of.
