Should I put leather soles on my new monk strap shoes?

Just bought these Magnanni Monk Straps.

Its a beautiful shoe but the sole is bothering me.
I knew it had a rubber sole but now that I have it at home and am walking around in just doesnt feel like a quality shoe, because the bottom feels almost like a stiff sneaker. I want it to have that stiff leather sound/feel that a sharp dress shoe should have (IMO).

I took it to a great cobbler in my neighborhood and he said he could replace it with a leather sole.
I realize I could be butchering the shoe if I do this.
    Would run me $80.

    Any thoughts?
