CALLING ON HOME SEWERS TO HELP HEALTHCARE WORKERS FIGHTING COVID-19
The lack of proper masks, gowns, and eyewear equipment is making it difficult for health workers to do their work fighting the novel coronavirus. In a recent New York Times article, medical workers said they were worried about how they can both fight the coronavirus without imperiling themselves, as well as their loved ones when they go back home.

I'm more a pecorino fan myself, especially if we are talking traditional carbonara served in Roma, and don't get me started on the nice spicy characteristic of some good aged pecorino on a Charcuterie spread.Well, I think "Giggi er monnezzaro" (Louie the trashman in romanesco) would have ripped all hair from his head ...
But, when it comes to food, I disagree with the Severe Wardens of Absolute Tradition - and, besides, one has to work with what he has at hand (don't you think so @vdubiv ??).
So I applaude your experiment
Just a suggestion: try to find some Pecorino instead of Parmesan.
