Carbonara??
I guess.

Set Fettucine to boil in salted water..
Olive oil in a pan, roughly chopped Bacon. until crispy. heat off. Cream, 3 Egg yolks. 3 or 4 spoons of pasta water. drain Fettucine. add, mix. coarsely chopped Parmesan.plate, Cracked Pepper.
10 Minutes.

Edit:Thin sliced Bacon i had in the Fridge. @CornholaVirus.

Well, I think "Giggi er monnezzaro" (Louie the trashman in romanesco) would have ripped all hair from his head ...
But, when it comes to food, I disagree with the Severe Wardens of Absolute Tradition - and, besides, one has to work with what he has at hand (don't you think so @vdubiv ??).
So I applaude your experiment :teach:
Just a suggestion: try to find some Pecorino instead of Parmesan.

I'm more a pecorino fan myself, especially if we are talking traditional carbonara served in Roma, and don't get me started on the nice spicy characteristic of some good aged pecorino on a Charcuterie spread.
Though since he said coarse chopped I'm going to guess it is fresh cheese and not the shaker can stuff with wood shavings in your get at the store, so extra points for that!

sadly this lockdown has me making use of my pantry staples as well, no trips to Roma at the moment:brick:

Not a pie man but that’s a good looking crust
First time trying a crust with sour cream. Gave it incredible flavor and texture and was very easy to work with.

I think it was @Piobaire who posted a youtube video to this british guy who cooked at his stall at a market. It was a porchetta recipe. I can't find that series anymore. Can someone re-share? Might have been @beargonefishing
