Manton, in all honesty, I think your CIA recipes are impressive looking, that's about all I know of your cooking, but you should do something you can pull off well. Before negative space there was no negative space. French dish name is always a +1 mayne.

The asparagus soup you did the other day would be a good start. Then maybe Matt's lobster dish from a little while ago if you can. That may be the nicest looking plate I've seen on this forum.

Yep. This is a great one-two punch for people impressed by plating.

More modern, I think. They loved Coi, for instance.
