The Kona Peaberry from Big Island Coffee Roasters is exceptional. I wish there were a touch more acidity but that's not a complaint.

Mr. Ed, have you tried/brewed natural processed beans?

Might be right up your alley.

My favorites naturals are from Reprise Roasters in Chicago. They usually have a few to choose from. If you don't mind ordering online.

Grinder: Gefu Lorenzo - set on 11. Grinds are like slightly coarse table salt
Brewer: Kalita Wave 185
19g beans
305g filtered water, just off the boil
50g bloom, 30 seconds
25g pours every 10 seconds until you hit 305g
top of bed went dry at 3:32

Have a used a V60? If so, do you notice a difference between the Kalita and V60?

I've never had a bad cup with the Clever, and it gets that body from immersion with the clean taste of a filter.


The best cups I've ever had were drip cones, but they're so damned inconsistent.
