Mr. Ed, have you tried/brewed natural processed beans?

Might be right up your alley.

My favorites naturals are from Reprise Roasters in Chicago. They usually have a few to choose from. If you don't mind ordering online.

19g beans
305g filtered water, just off the boil
50g bloom, 30 seconds
25g pours every 10 seconds until you hit 305g
top of bed went dry at 3:32

I have not used a V60. For pour over I have the Kalita and a Clever. On weekends I make French press.

I recommend the Clever Dripper. You get the best of all worlds I've found.

I've never had a bad cup with the Clever, and it gets that body from immersion with the clean taste of a filter.


The best cups I've ever had were drip cones, but they're so damned inconsistent.
