Most of my shirts have collars which are more suited to a slim tie. Is this acceptable for a job interview or would a more traditional wider tie be better?

What width tie do you consider "slim"? What width are your lapels? If you have a collar with little depth and you use a regular tie then the knot just looks ridiculous compared to the collar! Skinny ties are certainly not close to regular sized ties in the neck area.I'm not entirely sure why the type of collar is dictating your choice of tie. Are these very narrow-spread point-collar shirts? Many "skinny" ties are close in width to regular-sized ties up around the neck area.
Ideally, your tie width should be a function of the width of your lapels as well as the width of your body/shoulders. The idea is for the tie to be in proper proportion to your body. If you are skinny, then you should probably wear a slimmer tie. If necessary, you should get a shirt that is more accommodating to your tie.
