without besmirching mr. cosentino (haven't eaten there), i think it's more along the line of the troggs.


The charcuterie shop is OK, though the presentation is mindblowingly obnoxious. The restaurant is so awful I would prefer to eat paste.

how do you forget about a cooked steak? It takes all of a few minutes to cook. Or did you do it sous-vide and forget it in the bath? Still.... what did you eat?

Made a really nice pan of root vegetables and forgot about the meat. It was resting and I just didn't eat it.

Guinea hen is great because I love its sweetness. However, that's one little bird. Pig offers you a massive amount of cuts for life. I couldn't eat a little bird for life.

The question wasn't "if you could only eat one protein for life, what would it be?" It was "what is your favorite animal flesh?" And the answer, for me, is squab.

In that case, me too.

That squab wrapped in piquillo with corn we had at Masa my first weekend in San Francisco is still hands down the best dish I've ever had. It was so simple, but perfect. It kind of opened my eyes, because at that time, I wasn't even done with school yet, and I truly believed in my heart that more = better. That really changed things.

Had shortribs tonight. Delicious, but felt like I was going to yak after a few bites. Not the first time that red meat has made me feel this way recently. Sad.


In the early '80s I worked in a slaughterhouse for summers which put me off meat briefly, and I tried vegetarianism in the early '90s -- otherwise I have been a notorious carnivore. I hope your meat revulsion is likewise short-lived.

This thread makes me want to ask what everyone's favorite animal flesh is. If you could only eat the flesh of one animal, for the rest of your life, what would that animal be? For me it is clearly the pig.


If it is the whole animal, the pig is the clear winner; if one cut, give me the rib steak ... :drool:
