Late to the party here. I enjoy pine nuts, but it's probably true that they're one of those ingredients that's suddenly in vogue. My biggest problem with them is that they're farking expensive and go bad so quickly that I have the issue of buying a $5 pack of pine nuts, using a few tablespoons of them in a pesto or a salad, then finding the remaining 80% of them in my cupboard months later, stale and nasty.

Pio, does that Aerogarden throw out enough produce for a good pesto? Pesto uses so much basil I tend to need a full bush of it. It's the first I've heard of the thing but it looks sort of interesting. Your thoughts would be appreciated.

Try freezing the pine nuts, they'll last almost indefinitely.
