Evanstaad Reserve is incredible, incredible wine.


Tonight we're having a tasting at the shop. Yesterday was my boss's birthday, so we get to open up the good stuff today.

Yeah, it's a very good wine. Tomorrow is a charity event where all the best places here will have food and booze. Where I was last night will be there doing tuna carpaccio (gave us a taste last night, very nice) and pouring a vino verdhe. I know I'll be dragging ****** Monday morning.

Dude I woke up so hungover today, at 8 AM. WTF is that? I'm so happy I don't have to work and can just go in and taste. Let's be grog buddies. Although I think Matt and Foodguy win this weekend by going to the Kermit Lynch Oysterfest.

Oh, I am not hungover today. All I had was those three glasses of Pinot and three glasses out of the bottle of Peju. The somm wanted me to try his latest barrel aged, custom mixed cocktail but I declined.

So, taking a braised pork belly, shredding it, putting it on creamy polenta with truffle oil. What to pair?

I'd go with the 05 Parusso, although most of those would match up well. The amarone probably wouldn't match well, but I've had that bottle and it is oh so yummy.

the '05 will be too young, IMO. The '04's seem more approachable to me in their youth but that '05 could easily go for a decade and beyond. A basic AOC Langhe would be my choice.

also, add some awesome mushrooms to the polenta.

Hmm, back to guessing on my wine. I did have one of those 05s already and was too young. Was a three pack buy off WTSO.

The telegraphe is way too young. Manton will be mad at you.

I still think Piedmontese Nebbiolo will the best pairing for the dish. Pick one of the '04s or the '03 if you're feeling ballerish.
