Shoe repair / sole conversion question

For a long time now I’ve been in search of a pair of burgundy pebble grain penny loafers. You’d think this wouldn’t be such a rare beast but they seem to be very hard to find.

I recently came across these by Blackstock and Webber:

The uppers are pretty close to exactly what I’m looking for but that’s seems like a very hefty pair of double leather soles.

Seeing as they are Goodyear welted, has anyone ever successfully done a conversion to a different sole? The city soul by Meermin or that ‘Dainite Lite’ that C And J do would be perfect (both are low profile rubber) - even a standard Dainite would probably be OK or failing that a single leather sole.

There’s a traditional old cobbler near TPA who I’ve used before on more conventional repairs and he’s done good work for me. I just have no idea if this sort of thing is precedented on a brand new pair of shoes.

Any thoughts, advice or experiences much appreciated - cheers!
