I'm looking at a pair of boots with "rubber protectors" on the leather soles. They kind of look like R1 soles glued onto leather soles.

They're quality shoes so I'm not worried about the craftsmanship, I just wonder if the rubber protectors will improve traction in the wintertime or if I just need to find dainite/R1/commando soles built through?

All my leather soled boots have lug topys on them. They solve the issue of grip and traction as efficiently as any other rubber soled boots.

Absolutely avoid Dainite if you want traction in the winter. They are like skates on ice, and wet floors.
