Before cooking, how do you properly clean the bone on a lamb shank? I can't seem to get all the fat and connective tissue off, so it doesn't end up looking as presentable as I'd like it to.

just scrape it with a knife blade. also remember that the meat will pull back from the bone during cooking, which will make it look better.

Tongue is delicious. I braised it, skinned it, sliced it, and seared it on high heat very quickly to crisp it. I served a strawberry gastrique on top for my friends who were a bit squeamish to try it. I never would have thought strawberries and tongue would go, but it actually worked. Also, the achenes on a strawberry look very similar to the taste buds on a tongue...so that complimented it as well.

No, just sort of a random dinner from what I could find. Turned out to be fajita like. Steak with spring onion topped with fresh avocado and cilantro wrapped up in a tortilla.
