There's a Vietnamese sandwich shop by my house that I go to and always order the Banh Mi Dac Biet there. It has head cheese in it and it delicious.

A bit of an aside but Spanish grocery stores smell terrible.

I don't understand who buys that stuff. For those that never took a microbiology or biochemistry in university, agar is a gelatinous substance with a fairly distinct smell. It's the stuff that gets put in petri dishes for bacterial cultures, etc.

Agar Agar is eaten in Japan (sans tongue). Tastes like cellophane. Most "nasty" things dont bother me (bit the head off a raw octopus once), but I kinda felt a little grossed out when I saw a headless rabbit, fur still on, at an "Oriental Market" in my home town. Sitting right next to the hog snouts/hooves.

My wife and I honeymooned in Barcelona and went to the market there one day. There were all kinds of goodies including tripe, tongue, brains, bull testicles and sheep heads.

That doesn't bother me. There's something more off putting about tongues stuffed in a jar filled with gelatinous liquid imo.
