I don't think beer goes with hot (spicy) food very well. The flavor of the beer becomes muted or dilluted. I think it goes better with sandwiches, burgers, salads, pizza, etc. Things that aren't overpowering.

You shouldn't drink a gourmet beer with spicy food. A pilsener is best for that. It's good for fast consumption without worrying too much about the flavor of the beer it's all about the food in the first place when you're having a spicy meal IMO.

I've found that Pilsener Urquell goes really well with spicy foods in general, especially Thai and Indian food. Some of the more gentle IPAs go well with Indian food. Too much aggressive hoppiness can interfere with the spices in Indian food. For grilled meats and such, smoked porters are choice. The two are just perfect for eachother. Rogue Chocolate Stout goes really well with dark chocolate truffles. To be quite honest, I don't really like beer with food all that much, though I can appreciate food pairings. I prefer to enjoy a beer by itself and take in its character and depth without the interference of food. For the most part, when I'm eating i'm usually drinking water or pop, or an appropriate wine.
