Had two eggs this morning the way I like them best: over easy.

They are high in cholesterol (especially the yolk), so I would keep that in mind, but other than that, they're good.

Add a small amount of vinegar to the water--- say a tablespoon or so in the pot. It will help the egg coagulate and hold a good shape. You need more than one inch of water though.

My favorite eggs are actually Salmon Benedict, but I put down Sunny Side Up because its more of a pure egg meal rather than a meal with eggs as one of the ingredients.

I like em scrambled w/ a little shredded cheese. Recently discovered that putting some hot sauce (Tapatio) on them is good.

If I order them out, and I very rarely do, I'll go sunny side up.

I should have mentioned, I use vinegar. My problem is that I'm not getting good shapes. Once in a while, I do, but I can't tell what I do differently. How do you drop the eggs in?

Get a small bowl or a monkey dish, crack the egg into it, get the edge as close as possible to the water, and lightly plop it in. Some people completely submerge the monkey dish in the water, and then pull it out, but I don't think that's necessary.

Agreed, what a disgusting, dry mockery of eggs.

I eat a lot of eggs. Just got my cholesterol as part of routine bloodwork for a physical - 128 total, 77 HDL, 37 LDL. Not that a sample size of 1 is particularly valuable, but there it is.

Would you trade eating eggs for an extra year of life? I wouldn't.

My doc actually encouraged the eating of eggs, though I top out at probably half as many per week as thekunk.

To answer the OP, I like them every way, but they are best as Eggs Benedict.

Scrambled with either finely chopped fresh basil or tarragon. Sometimes as a breakfast burrito with chorizo and a dab of tomatillo salsa.
