Nice Collective and the like make lots of interesting trousers, that are definitely casual and definitely not in any of your categories. For fun outside of linen and leather (though fun in linen and leather sounds good!), some of the Continues people do quite different pants, for instance:
dude, I just picked up waxed cotton trousers (not jeans) that are awesome. Made by Shipley & Hamos from their new s/s line. Construction is top notch, with a taped inner and outer seam that emulates selvage lines. Havent been this turned on by a pair of pants in a long time.
