So I'm a big guy and really like buying dress shirts b/c they are sized.

My question is... how can I wash them in a way that will give them a more "j crew secret wash look/feel?"

I was thinking maybe washing them with borax and a ton of fabric softener.

Anyone have any experience with this?

---also wouldn't mind breaking in the collar somehow as well.

Wash in hot water and throw in the drier on high heat a few times.

It really depends upon the fabric but I think you will have the best results if you get oxford cloth and just hang to dry and don't iron.
