Grilled Bruschetta

We've done crostinis about 5 different ways on the site, and decided to try the cousin of the crostini - bruschetta. Both are just about the same thing - toasted bread with some sort of savory topping - but the Americanization of bruschetta usually involves a tomato topping. This is our version and it is an absolute home run. Did I mention the balsamic reduction sauce and the mascarpone cheese?

Looks great, must try that.
However, I remain faithful to the traditional: toasted break, rub garlic, add a mix of chopped tomatoes. Top with basil and olive oil.
I think I do this on average twice a week and when I have people over.

Branch out my friend. There are a million and one ways to make this. Part of the fun is trying them all...

I may try out your recipe next time I'm grilling. No idea where to find that cheese though.

You should be able to find it at any decent supermarket, and whole foods definitely has it. It comes in a little tub and should like like this:

yes... putting vegetables on a grill .... you are certifiably insane.
