Here is the little blurb on the 32 last discussing the Dover:
They actually state that the 32 is EGs most iconic last and the Dover the finest example of a shoe on that last. There is also some chit chat about how the stitching on the apron of the uppers from EG and JLP are a cut above all the rest of the competition. Apparently, there was a time years ago when the stitching on the Dovers was often a bit uneven in quality but that this problem is rarely found today. About 20 years ago they went through a period when there was also a lack of quality artisans who could do the stitching at EG, and there was a rumour that they might have to shut down that operation.
They also talk about how the EG lasts in the 1980s sported much more subtle differences from one another.
