Haystack Mountain Goat Cheese from Colorado is some pretty good stuff.
I used to live very close to their farm, and visited on occasion. Terrific goat cheese. Not easily sourced outside of Colorado, I'm afraid.
Just tried Twig Farm Washed Rind Wheel. I might like it better than Grayson, but they're very similar.
Twig makes some very nice cheese.
On a related note. I submitted my resignation yesterday to my career of 27 years.
I'm crazy but hopefully in this next year I'll have a shop of my own.
congrats and wish you the best of luck. I think a shop (and a book) will prove to be very good decisions for you. You'll also do very well in the shop if you stop wearing double monks without socks.

CG, had a Old Amsterdam Gouda over the weekend. It was wonderful, semi hard but creamy mouthfeel uhoh very nice taste, even some smoke at the end. It was covered in black wax. I loved it. I am assuming the aged Gouda's that you've posted here, they are harder and have a bit more "tang"?
How much is Old Amsterdam in the US? Sorry if the price questions get annoying; I just find it interesting.
not really sure what I paid, I took a chunk of it along with some other stuff. Zabar's has it online for about $20.00/lb, that's probably close to what I paid.
That ancient 6-year I posted is rare but it's not unlike L'amuse- which still is about 2 years old. At 6 years- it's almost rock hard,m very chewy at least and tastes like butterscotch.
Old Amsterdam is one of the best known and it's pretty tasty. IIRC- it ages for around 18 mo's but like some comte they test it and will sell it earlier or later depending on how quickly it has aged.
Any time you get into that 1.5 years range you're getting into some really interesting flavors in gouda.
