I will check out the Misono, probably not the Nenox. I was hoping for something fairly boutique that might have me buying direct from the actual person/small business who makes them. I know indesertum was throwing around Japanese knife names like he was Morimoto, I want to hear some of those brands again. I'm thinking I need a gyutou, some sort of yanagi (not so much for my own use but to have) a paring knife, a peeling/tourne knife, and then I don't know what else.
Nenox has quite a bit more boutique cache than Misono. I got one a while ago and Matt got a Corian handled one a while later.
All you need is a chefs and a pairing knife. Spend the rest of the time learning how to use them.
