Neither have I, and they dont serve it at "Family Restaurants"
I think the only place I have seen it served was at the grocery deli and a local sandwich shop in WA.

I can't count how many times I've seen chicken salad on a menu, either in sandwich form or on a bed of lettuce. If we do chicken on a Sunday, like in that Keller recipe, we'll strip the carcass and make chicken salad at home too. Ours is probably a little fancier and fresher than most diner offerings, but it's still basically chopped chicken with a mayo binder.

I went to lunch at Tao yesterday. One person at my table ordered the chicken salad starter (and apparently it was awesome)

That's weird since I've seen a chicken salad sandwich on basically every diner menu I've ever been to... Midwest, northeast, cali... I mean literally everywhere I've been.

haven't been around your parts much but I know of many people who have chicken salad on their hotel menus in Miami.

Don't think I've ever heard the term before...

* I've been enjoying curry chicken salads recently. The problem w/ chicken salad is that all it takes to ruin it is the single piece of gristly/***** meat. Therein lies the big difference btwn tuna and chicken salad. W/ tuna, you know if it's good or bad after one bite (and sometimes before). Chicken salad always keeps you guessing....

chinese chicken salad is a socal invention: basically crisp greens, (chinese) barbecued chicken, fried wonton skins, soy-based dressing ... in its earliest incarnation canned mandarin slices!

actually, if it's made right: with cabbage and lots of cilantro, it's pretty good.
