Caviar should be served...

In a tin, with a spoon and some champagne or vodka. Preferably, it is served to me in a locked room without other people around.

This is my rant about restaurants serving caviar "dishes" that do nothing but take away from the perfection of caviar itself.

Should it be wheeled out on a cart with a 19th century scale, the kind where you have to place cylidrical weights on the other side, and also a huge Weber-Kettle-sized bucket filled with shaved ice, into which half a dozen champagne and vodka bottles are shove up to the neck?

id prefer it to be served in a hollowed out truffle which has been plated in platinum, but thats just me.

A good friend of mine was a dancer with one of the Moscow ballet companies (Stanislavsky Ballet), and their touring took them to the Caspian Sea where a lot of the beluga fishing is done. They toured the black caviar factory, and as part of that tour they got to eat caviar with big spoons straight out of the storage bins. I always thought that was a funny visual given the glamor of the caviar in the west (and even back in Russia now), and how utilitarian it must have been to shovel caviar with a huge spoon.

I guess as a "souvenir" of their visit, they received a 3 liter can full of caviar to take home. Wonder what that's worth at today's prices?
