About to purchase... Global 2-piece vegetable knife set...

I have two questions:

1. Do you own other Global knives and/or have you held these knives in your own hand? I have a Global paring knife and never use it because I hate the handle and dislike the balance. Buy something that feels comfortable in your hand.

2. Do you have the skills to maintain the Global knives? Expensive knives are useless if you don't have a reliable way to keep up the blades.

You could explore the other Japanese knives for some variety, but there's nothing wrong with sticking with a brand you like. Have you seen the other brands in person? I have a Kikuichi utility knife that I absolutely love.

In addition to tips from the knife mavens here, I've received good advice from knifemerchant.com. The owner, David (can't remember his last name) is a chef and has tried out everything he sells.

What knives do have in your set now? Just wondering why you need two smaller knives for veggies.

one of those knives is a 7" and the other is 5"

at the moment i have (from global) 2 paring knives (not sure exact sizes), 5" santoku and 10" chef.

i really like the look of those vegetable knives!!! i made this thread to see if there was something as aesthetically pleasing and as good quality for somewhat the same $$$$

I completely understand buying knives for the aesthetics. Is the 5" veggie all that different from the 5" santoku? I imagine it's just a bit more curved on the point. Seems like you could use a knife in between the 5" and the 10", so maybe you could just buy the 7". Sorry, don't mean to try to talk you out of buying something you want. I'm just thinking what I'd use in my kitchen.

Both those knives are entirely superfluous.


i'm with big boy. what exactly would you use these for that you couldn't already do with what you have? (speaking as the owner of about a dozen totally superfluous knives i bought just 'cuz i liked them).

I'm convinced that a flat bladed vegetable knife, like the first one, is totally useful for something. I have one, and have no idea what that something is, but I know someday...
