I made biscotti tonight...

as I have many times. I think there is nothing better than fresh biscotti to go with a hot cup of coffee. Problem is I always end up making the same two kinds, with almonds or almonds with dark chocolate pieces. I want to try some new combos. What are some of the best biscotti you've tried?

Almonds are just fine. If you don't like them anymore, don't eat them that often - try out some other biscuits and then enjoy the classic cantuccinis again. I don't even like chocolate in them.
What you might try however is to add different spices like cinnamon.

I googled it too and just learned that they are also called Biscotti di Prato.
What I basically tried to say is that cantuccinis (or Biscotti di Prato) are a regional speciality that simply only exists with almonds. I personally think they are perfectly balanced in taste so I wouldn't want to change anything.
If you however still feel the strong desire to change something and personalize it or bring some change into the running system, how about adding different nuts, coconut flakes, maybe raisins, different kinds of chocolate (white, dark, milk ones), cranberries, other dried fruits or whatever.
Just be aware that they are no classic cantuccinis anymore.
