Tried a Balvenie 15 years last night. It was lovely...warm, honey, oak, just a hint of peat.

I had boxed wine. I keep a few in the house. Big house red if anyone has even heard of it. Not expensive but the taste I have to say is better than most boxed wines. The more expensive wines that come in bottles are..well..I only open a bottle when there is some celebrating in the house.

add yeast

Oh god this is so wonderful, one of my favourite beers. Bottled on 03/09/2008, so over 2 years old. The flavours REALLY mature in this one. Hints of sourness, spices, yeast, and mellow funky flavours with a lasting finish. Orval!

Can a bottled beer really last that long, or are you just throwing caution to the win...?

Beers without yeast will go bad in under 2 years though, yes. Drinking St. Ambroise Oatmeal Stout right now. Nice and rich, love it. Wikipedia: http://en.wikipedia.org/wiki/Bottle_conditioning Filtered beer tends to have a relatively short shelf life, rarely more than a year, as many compounds in the sterile beverage break down into unpleasant tasting ones. Live yeast inside the bottle acts against these processes, giving the beverage a much longer shelf life. A good bottle conditioned beer can maintain its drinkability for many years, and some can be aged for decades.

Nothing fancy tonight: a large Famous Grouse on ice and a Stella Artois

Going to a beer festival tomorrow though, which should be good
