what product (pomade? wax?) to achieve this hairstyle?

I want to style my hair very similarly to the hair of Dennis Reynolds, a character from It's Always Sunny in Philadelphia:

What kind of product would you use to achieve that look? Pomade? Wax? Gel? Mousse? Hairspray? something else?

And would I put it in when my hair was wet, or dry?

I have had a simular style. I used a heavy wax: Murray's superior. Apply when the hair is wet. First melt it in your hand. A little goes a long way.

I would say Murray's Superlight would be most appropriate:

Murray's Superior after 1 or 2 days of rinsing.

I have no idea who the char is. If he is the one on the right I would put in when damp, then blow dry on low as you style, because that has a lot of lift.

^Depends on the weather, I guess. I used the superior kind it in summertime. In winter it was unusable.

You will need a certain cut and hair length, but a texturizing wax or pomade would work the best. I only use Schwarzkopf Osis, either the thrill gum or messup matt would work.

I user American Crew Fibre.

As one of the other posters suggested you will also need to get your hair at a particular length, textured and etc. I suggest you find a hip hairstylist salon where inspite of the hipness of the establishment the stylist is down to earth and will work with you to get that style. A cheap barber aint going to do it, nor is a try hard hair salon/stylist who thinks they are worth what they charge and look to get you in and out as soon as possible.

My sides always stick out, I'm trying to grow it longer, but not sure how long. (Will post my head pic tomorrow after a shower)

Not to step on any toes- but you'll notice that his "do" isn't stiff and greasy- so I'd stay away from the Afro-wax, honestly. I'd go with Aveda's gel for men with a hair-dryer (slightly dampened hair) or use their pomade, or grooming clay. You may need to get your hair slightly textured in order for it to stay up- next time you get your hair done, take a picture with you- stylists actually find it super helpful. My $0.02.

It's only stiff and greasy for the first day or two. After that it pretty much turns matte.
