Both colours are great. I went with chocolate because I already had Trickers in snuff suede. I guess that doesn't really help if you want someone to decide for you though.

I don't think they're a fad. Monkstraps, on the other hand...

The design dates to WWII at least.

Fair enough. I think I, too, am leaning towards snuff.

Dark brown I feel might look better in a more "structured" chukka -- like the C&J Tetbury or something like that.

I just wore my new snuff suede chukkas today for the first time. The snuff is a very attractive color, but I wish I had gotten the dark brown instead. The dark brown is arguably a more versatile color and I think I would wear them more often. I am, moreover, something of a klutz, with a tendency to spill stuff on shoes. Brand new expensive shoes usually. I think the dark brown would be less problematic in that respect.

But I might as well be the first to offer you the standard SF advice: the obvious solution is to buy both.

I think the sand ones are the most classic, especially as they will darken with wear. The snuff are good too. I think a casual suede shoe like this should be lighter in color. If you want dark suede shoes get some brogues
