Any tips on the best way to grill snapper? I was thinking just some light olive oil, sea salt and lemon juice. Thanks for the help. I am cooking it over charcoal.

The fish that wears red clothes...

I have only grilled it a few times. I normally wrap it in soaked corn husks or grape leaves for flavor.

i bought a perforated grill pan that sits right on your grill, preserves firmness and works well for this.
i just brush it with a combo of lemon juice, orange juice and butter

To put it crudely... drop her drawers and set her on the grill. Simple.

It's a little passe because it had become such the trend in recent years, but if you insist on grilling, I would consider a cedar plank.

IMHO, Snapper is meant to be served raw (hamachi) or blackened.
