I'm surprised to see someone say that goose is better than duck. Ugh.

Swan is apparently not that good. It's supposed to be gamey. I would wonder what farm-raised swan would taste like.

I know this because The Queen owns all the swans in England (or something like that), and there was a chap who found a swan electrocuted by power lines, cooked it up and ate it. He was then charged with theft from the queen. There was question about whether swans should be protected still, and then the question of why someone would want to eat an unpleasant-tasting animal in the first place.

Agreed.

If swan tastes in proportion to goose as goose does to duck, I'd rather eat sludge. Wild goose is not so good. I suspect swan would be much worse. You can get swan hunting permits though.

One of the worst disappointments I ever had in a restaurant was an order of wild duck. I like duck, I like small wild game birds--- what could go wrong?

The stuff tasted like liver. Bad liver. Obviously, these ducks had done a lot of flying, and re-fueled on some nasty fish. Can't imagine why wild swan should be different.

You should definitely give it a try. I'm pretty sure the one I ate are not those North American wild geese you find shittin all over the park.

I cooked two geese for the first time at Christmas. Purchased at Whole Foods.

At the end of it all I was left with what seemed to be a gallon of fat and the equivalent of a medium-sized chicken in edible flesh.

From that day forward, all geese are safe from me.

In germany you usually only get geese for a short time - which corresponds with a trade show that I always go to in germany. so, once a year I have goose - and it is usually one of the dozen or so best meals of the year for me

I once had a good goose, but generally it is awful. I do like it more than turkey, which I find inedible.

I've had fantastic and awful wild duck. Generally, wild game is best eaten at really good restaurants in Europe as their sources are better.
