Not denying that. But the thought of you running FOH, dressed better than the ******* President, and then overhearing some marsupialed conversation between two Bay Area yuppies about whatever saccharine liberal issue is that day's amuse bouche before the inevitable self satisfied flogging session of George W. Bush and Reagan, flipping out, ripping the Bramblefuck Happy Hills Farm Arugula Salad from their table and throwing them out... it's too precious to not consider.

Wish I was the photo taking type because I have a hunk of beef shank here that looks like it actually came from a T-rex.

I have a very late dinner tomorrow night (10pm) so I am going to eat it for lunch. It's times like this that I'm glad I have a tiny little Le Creuset that I can braise things for one.

For those interested in sous-vide, but hesitant to invest any money in to it, try the stovetop method. I've done just a few things and have had great results. Obviously there is a bit less control, so you have to pay attention, making the long soaks a bit more difficult.

I like building stuff, so I might try the build-your-own immersion circulator that kwilk posted somewhere from wired magazine. Budget for that was about $100.
