My sister never ate fish until moving to Italy. Now, from what I've heard, she eat's octopus like it's going out of style.

Alright, next up will be shrimp scampi.

Yes, I ******* know scampi means "shrimp" in Italian. But when I say "shrimp scampi", you know exactly the dish I am talking about. Please direct your efforts to the guy over there ordering a martini with vodka.

Shrimp scampi in American English is supposed to refer to Langoustines, innit? Otherwise they'd just be shrimp.... (yes I realize how small American shrimp scampi are....)

Scampi in America generally refers to a certain way of cooking the shrimp.

Finally found some good avocados. I've been treading water with sub-standard product to get my guacamole fix.

I don't want to be responsible for you spending $80 on a little bowl of guacamole, but anyways: Puree 2 tomatillos, quartered, 1/4 cup white onion, two jalapeno peppers, seeded, 1/4 cup of fresh cilantro, juice of one lime. Cut 4-5 avocados into small chunks, squeezing additional lime juice on them. gently mix avocado with pureed mixture, season to taste with salt and refrigerate for an hour and a half. Sprinkle with chopped fresh cilantro when serving. You can adjust everything to your tastes and the result is a really fresh tasting guacamole with great consistency. Great color too.

In little but significant ways. You should give it a shot. I took it from the Dean & Deluca cookbook btw. Used to make it the same way as you do, and would mix to the common mashed consistency. Have never gone back.

An avocado only costs $5 a pop here, so I have it in the budget to overnight some tomatillos in.

It's cost me about $90,000 to get close to Styleforum-approved, but that's alright. I think Piobaire has spent about that on his appliances.
