Good thread.
Generally agree that perfectly hemmed jeans are too effeminate.
Beyond that, I think to each his own. Sometimes, I like a tight cuff to show off my Red Wings or my Shotos. Sometimes, I like the crazy thick stacking at the bottom of my 19 cm Diors when I walk barefoot and shirtless strumming a ukulele or a mandolin strolling around my apartment trying to seduce a girl.
Generally, a few stacks or a few rolls are ideal. Too many rolls or perfectly-hemmed ends will be the worst

Only time you want perfect hemming is wearing "formal" slim cut jeans in the Italian style if i can put it that way, with expensive shoes. Otherwise you need some stacking or do turn-ups. More with skinnies than other cuts. It's just part of the look of jeans - they should have more breaks than a pair of trousers.
Re the cowboys, the inseam needs to be longer to keep the whole leg covered when sitting on the horse. Riding in bad fitting jeans can give you rashes in all sorts of uncomfortable places.
Re height - shorter people need to take the middle ground on hemming: not too short and not too long. Anything else accentuates the shortness. Only tall people can play around with either extreme of length.
