Halibut. Everytime I want to cook with it though I have trouble finding it.

i've always had trouble cooking halibut. seems to dry out really fast. i did have some luck steep-poaching it -- put it in a bowl and pour hot liquid over, let it sit until done. also nice cooked en papillote ... as long as you get a thin piece so it cooks quickly.

Yes. En papillote is probably the best way. I also like to grill it to make fish tacos too. Probably blasphemy I know.

I don't like halibut.

Mine are, for now, black bass, sardines, rouget, turbot and dory. I don't really need to go past the last three, though I do crave sardines from time to time. I don't like soft, white fish much, which can be tough around here.

^Dory/roughy is also a fav though it's become very scarce and $$$ in the midwest the last few years... along with most other species for that matter...

Surprised no one has mentioned smelts yet, they are pretty damn good during their short season.

Coastal Seafoods gets Dory occasionally.

Yeah- last time I had it was from Coastal.

I should add there's nothing wrong with the local brook trout and walleye up here in d' nord' either.
