My family is from the south-west...

I have been raised eating these kind of heart disease on the plate recipes ...

Wonderful, I was wondering when someone would mention this. Good on you for preparing it. This is the ultimate comfort food.

I might be tempted to replace the Monbazillac with a first growth sauternes for more concentration and noble rot (not yquem-although great is too expensive for me)

Sure but the portions are reasonable so you are not any worse of than elsewhere.

I look at it in a satiation per calorie/saturated fat ratio. So this type of high satiation cuisine scores well despite the fat.

to me french style is a disheveled guy in a suit smoking cigarettes while singing about a revolution of some kind. otherwise he is protesting the backbreaking 30 hour work week for the ouvrier
