Well, yeah, the purpose was exactly that. They do count. Those tails look like they'll fall out of the bone. Yum.

Chick peas and pig's feet (garbanzos con patitas)

They're delicious, but I seldom eat patitas anymore, 'cause they're almost exclusively fat. However, they add a delicious flavor to stewed beans....

Just got 10# of fatback.

Thinking I'll make some smoked beef kielbasa in the next few weeks. 5# requires 2# of fatback, per the Ruhlman recipe.

Lenguas is the best taco meat, except for the gross factor

chicken liver dinner (southern style) with onions

calf liver "foie de voeu" (very fine line between carnivore perfection and gross hunk of meat)

Its the very essence of beef flavor, with a silky texture....it really is a gift to man (roasted correctly that is).

Beef tongue is also a fav. Eat it as often as I can.

My father loves liver steaks and kidneys. Both dishes were regulars at my house when growing up. I was the only one of my brothers who could eat them, albeit both drowned in ketchup. Nowadays, I have kidneys once in a while at a local diner and It's delicious. No ketchup on them now.
