eating road food

Wrong. Dehydration is the key to successful long-distance travel.

Chipotle or Qdoba - Double Meat, Fajita style, no cheese/ sour cream, guacamole...

It's not as easy as you make it sound. However, there are a few places with a healthy option or two, for example a Burger King tender grill chicken sandwich with mustard only.

Also, as has been stated, dehydration is best for road trips, at least when you're riding with me.

Are you talking about for in-the-car or stopping to eat? If it is stopping to eat, just be sensible - especially if you are on vacation... its vacation - take a vacation.
