Holy crap, how is that I never knew about greek yogurt before? So much yummier than typical American style yogurt. A little bit high in saturated fat though...

Try Skyr. It's icelandic. Extremely thick, very low in calories. Go to a Whole Foods or something like that and pick of "Siggy's"

I love it, have it every day now. It's the rolls royce of yoghurts. I personally like the vanilla... real vanilla beans.

You use them for everything? Sear, sauteed and pan roasting?

Not everything. First, I like to be able to see any juices on the bottom of the pan if I am going to deglaze, and with the black steel, it is hard to do so. Second, I tend to cook hot on top of a stove less now than before, given all of the things we know now about cooking. Still, for eggs they are great, and if you braise vegetables and want to caramelize them quickly afterward, there is nothing better. Also, for searing after a braise, they can't really be beat. I like them for cooking fish/scallops, but nowadays I am lazy and nonstick pans are a lot better than they used to be.

In this land of no food, I just found Chipotle Chiles en Adobo in the can, $3, apparently new as of last week at one store. I have two or three solid uses for them and my mom used to send me 4 or 5 cans every few months in care packages, so no need for that now. I'm on the verge of writing a cookbook for the locals now.

Is that like a Big Green Egg on steroids? Or just a BGE with a pleasing but superficial boob job?
