Braised pork belly. Oh man, otherworldly.

Gome will like this. I paired it with a Malvasia Bianca. Went superbly.

Started off with two beautiful slices of seared foie gras and baguette. Then moved to Three Little Pigs pate, cheeses, and a few other nibbles, all matched with a Rhone style CA wine.

Ahhh.

We went retro. Trying out a new farm for meat, we had steak au poivre with pommes frites. Really good stuff. First, we had some tiny artichokes we found this week, along with some cepes. Nice.

Brined pork tenderloin, mashed potatoes that would have made Robuchon himself jealous, sauteed morels, and pan-fried asparagus.

Roikins didn't get to taste the sausage, but he did see it in my hands. I did share iammatt's sausage with my mother. We both agreed it was superb.

I can't stand the thought that both Kyle and his mother have tasted Matt's sausage and not mine. Good thing I post the sausage pron for fapping.

I hope to one day taste your sausage. If you truly loved me, you'd pull a Van Gogh and cut some of it to mail to me.

Dude.. a minute ago, I too wanted to taste Pio's sausage, but now I realize how **** that sounds. (request for a "special delivery" from "uncle Pio" notwithstanding)

You're just now realizing how **** it sounds? I've been doing the innuendo thing pretty much constantly since the very first day Pio talked about meat. Either you're **** for not noticing or I'm **** for making something really **** sound normal.
