I just wanted to share a healthy pancake recipe with anybody interested. It's become one of my favorite quick healthy breakfasts. The recipe comes from Eating for Life and while the individual ingredients sound kind of gross mixed together it is really quite good.
In a blender mix:
1 cup uncooked non instant oats
1 cup fat free cottage cheese
6 egg whites
1/4 teaspoon vanilla
1/4 teaspoon cinnamon
2 packets of sugar substitute
(and I usually toss in a banana)
Mix thoroughly in the blender and then cook as you normally cook pancakes. Top with some sugar free syrup and fresh berries. Makes 2 servings
Anyways, if anybody gives it a go let me know what you think.
