pretty good! though I wasn't aware you add bean sprouts with the scallion and hoi sin sauce too- might give that a try next time.

unlike your westernized tortillas, chinese pancakes are of fine texture, almost transluscent, soft to touch and has to be handled delicately.... like the bosom of a young chinese lady.

Matt - that looks fantastic! I posted once before that Chinese food is not typically economical to cook at home due to obscure ingredients, need for intense heat sources and commensurate ventilation, etc.

But DAMN... I'm so jealous that you can do that at home. Well done, sir.
