I don't understand:

Twitter.
why people don't say please & thank you.
how people continually confuse "your" and "you're".
why some people don't use the subjunctive mood.
AC(lightning bolt)DC fans.
why Soulja Boy is popular.

fat chics love of spandex and sleeveless tops
bitter people that want to entail you
religious people that do drugs/**** around/are gay
"Gays for a free Palestine"
inconsistency as a default state
people that preach tolerance, that shout down those that disagree with them

To the OP, the note taking? I know a guy like that. I can't stand him, for several reasons, but what he does with his notes is attempt to change what happened at meetings. For instance, he'll attribute something said to a person, and the person didn't say that, nor was that even said. But he'll argue, "No, it's right here in my notes."

The diet coke will still take 200 calories out of the meal. That is significant if it happens often.

+1 - people who really believe in something seriously, very religious, very anti-religious. but people who essentially believe in scripture, and then turn around and argue that one specific part of scripture shouldn't be there, I dont get.

gun people. just dont' get it.

and flip side, those who are totally anti military/police/security

You're the boss. Fire his ass! A guy at my office follows up every meeting with a redundant email restating everything that was said in the meeting, almost as if everything came from him in the first place. It's ridiculous. What's more ridiculous is that his boss actually thinks he's on top of things because he does this ****, when in fact, nothing at all has improved under his management. He's an anal control freak, but the numbers are the same as before he arrived, so he's accomplished absolutely nothing. I'm in my last 3 weeks there, however, so I don't care anymore. After that, I will be unemployed. ^_^
