With linen, I think gray would be better...linen can reflect the light more sharply, and almost give off a black, for which gray is a better match.

So we put this carpeting in, and the same day it is all set, I go out for lunch.

It's a quick lunch, and there's a Legal Seafoods nearby.

That's right: its the carpeting Legal Seafoods has chosen for all of its restaurants. I mean, every restaurant.

At least I know that it will stand up to spilled food, vomit and probably feces (although I get few visitors from San Francisco.)

The white definitely not, but a smoked gray would work.

Maybe - I'm not sure of that either. I would probably prefer a mid to light brown horn for a summer blazersuit

You need to us linked buttons, like a cufflink, so you can change out the buttons on the blazer suit and use ones appropriate for the occasion.
