black patent or calf = most formal
brown calf = a step down, but has a bigger range

but what about burgundy colors, or materials like cordovan?

I would generally put burgundy between black and brown, but much depends on the style of the shoe and what it's worn with.

I would say that oxblood type colors are a little dressier than brown. But it really depends on the shoe.

I really don't care for cordovan hide. It's not as comfortable, and it doesn't breathe like calf. But if I had to wear black patent type shoes, I would rather wear a highly buffed cordovan hide than patent leather.

Just my random thoughts.
