There's a great bit in one of Keller's books that whenever you're transfering from one pot to another, it should always pass through a strainer or chinois. I've taken that to heart. I get accused of being anal, but refinement is all about the little things and I totally agree with Keller's overall approach to cooking.

Definitely. It's surpising how much all those things add up. If you take extra care throughout every step, it just makes the end product light years better than it would have been before.

Yeah, been doing more than my share. Finally got something I've been lusting for for a long time: an Arc'Teryx Fission SV jacket. Last time it's made in Canada.

Belgian chocolate. Wittamer's creme fraiche a l'ananas confit et chocolat noir (fresh cream with candied pineapple and black chocolate) is the finest thing you will EVER taste.
