So few people understand what a real cocktail bar is trying to accomplish. One of the worst legacies of Prohibition (in the U.S., it had benefits for some overseas) was that it made people forget how to enjoy and replaced it with teaching them how to drink. The two are not synonymous.

I am not cool enough for Milk & Honey, but I used to spend a lot of time at Sasha Petraske's other location, East Side Company, and still frequent the place on rare occasions. The bartenders are very good and the drinks are made with tremendous attention to detail and top quality ingredients. Frankly, the cocktail trends has gone on long enough in NY that there are lots of other places that turn out very good cocktails (and as a corollary, lots of places that will sell you crap for $15). As I have written before, your safest bet is to find a place with an old union bartender. They know the trade and have been doing it for a long time. 21 comes to mind, as does many of the older, non-boutique, hotels. Same with the clubs. Good advice is to find one place, go there enough and teach the bartender what you like. I have begun a regular habit of drinking after sports on weeknight evenings and the bartender knows what I like and how I like it. He doesn't control the bar buy, so my order depends on what they have in stock week to week, but I know I will get something I like.

milk and honey is just an awkward place...i like east side company bar a lot but it's empty and my friends hate that. Little branch is better and I recommend that. Plus I love the door guy there.

My experience, admittedly about six months old, is that ESC bursts into activity around 11:30 or so during the week and a bit later on weekends. I prefer a place that is quiet. If I want screaming kids, I can stay home.
