There is Huwyler near Bellevue on Stadelhoferstrasse. I haven't used him as I have my English shoes resoled at the respective factory, but he also does custom shoes so he might be a good choice. There is also Balint, but I don't think they do repair work. Another option would be Schulthess on Rennweg, repair atelier on the first floor (I think, you have to use the elevator after entering the shop).
