My Wife and Kids. Damon Wayans was hilarious on that show.
arrested development is the main one that comes to mind. Amazing show that got attention way too late.
Americans just don't like to think when they laugh.
I'm probably the only person who thought Grounded For Life was funny.
arrested development and boston legal should've had longer runs.

Honorable mentions - To be fair most of these probably deserved to be canceled (except Jericho), but I would have enjoyed seeing where they went.

I've never seen a single episode from any of these shows.
Firefly should've had 6 seasons rather than 2/3 of one. Deadwood ended so abruptly it was just damned unsatisfying, and as HBO shows go ending Rome after 22 episodes was a little quick as well.
Action - Jay Mohr as an arrogant, d-bag film producer
SportsNight - Aaron Sorkin's first show - went 2 1/2 seasons but got jacked around with timeslots and schedule changes.
K-Street - one season on HBO. Confusing but cool.
The Duck Factory - a young Jim Carrey as an animator. Lasted one season on NBC.
And there's one more, but I'm completely blanking on the name.

Castle's alright, but in the same way Bones is alright. They can be fun to watch, but you keep remembering the better shows the lead actors were in. Edit: Yes, I am a Joss Whedon fanboy.
