I like ironing... But I don't mind some shirts that don't need it. Is the fabric suitable for hot weather? (Do they wear 'cool'/are they breathable?)

Don't get me wrong, I like the ritual of ironing, but I also LOVE seersucker, and part of the charm of the fabric is that it's inherently non-iron due to its weave. Conversely, it's always just a little bit rumpled, but it's as cool and breathable as any summer weight shirting you're going to find...including linen.

It was so cool in the Bay Area yesterday that my spring/summer look included a heavy fisherman's knit sweater when I headed into SF for dinner
